Do not cook with this. The smoke point is 107°C and the polyunsaturated fraction is 68%, which is a combination that oxidises on contact with a warm pan.
Six months, refrigerated once opened. The short date is the honest consequence of the fat profile, and anyone selling flaxseed oil with a two-year date has done something to it.
